Authentic Wisconsin Bratwurst
In today's connected world, it is no longer necessary to drive to Wisconsin to get your bratwurst fix. First check your local grocery store: Johnsonville bratwurst is now available in many parts of the country. If you can't find it, simply order some online from Johnsonville or Usinger's.
Although smoked bratwurst is also excellent, my favorite is fresh (uncooked) bratwurst. Put the bratwurst in a pan and cover with a bottle or two of beer. A cheap, mild lager like Miller or Budweiser works best. I have used strongly flavored microbrews but they can add an off-taste. If you feel like it, add some sliced onion to the beer as well. Boil the bratwurst for 15-20 minutes until cooked through, then grill briefly, turning once. Serve on a sausage roll with mustard, horseradish, and saurkraut or the beer-boiled onions.
